Well, life has been crazy so I've been lame in neglecting my blog. But here's something amazing to make up for it:
In my hunt to discover new, quick, and easy meals, I found a recipe for Chicken Lasagna Roll Ups.
I was amazed at how simple it was and it was a huge hit with the hubs. It has definitely been added into our rotation.
Ingredients:
>3 cups of cooked and shredded chicken (about 2 boneless chicken breasts)
>8 lasagna noodles
>2 cups spaghetti sauce (like Prego or Ragu)
>1/4 cup Milk
>1/4 cup of crumbled Feta or Blue Cheese
>1 cup Ricotta Cheese
>1/4 cup grated Parmesan Cheese
>1/8 tsp Pepper
Directions:
1. Preheat oven to 375.
2. Cook lasagna noodles.
3. Dice and cook chicken. When finished cooking, dice/shred as small as possible.
4. Combine chicken, cheeses, and milk in a bowl and mix thoroughly.
5. Spread 1 cup of the spaghetti sauce on the bottom of the baking dish.
*I used a medium sized lasagna dish, which was perfect for 8 roll ups.
6. Using a regular spoon, spread chicken/cheese mixture on lasagna noodles and roll up jelly roll style.
7. Take lasagna roll up and place, seam side down, into the baking dish.
8. When all roll ups are in dish, cover with 1 cup of spaghetti sauce.
9. Cover and bake for 30 minutes.
10. When baking is complete, let sit for 10 minutes and top with additional parmesan, if desired.
